Carrots are a powerhouse of nutrition, containing significant amounts of fiber, potassium, and antioxidants. They offer a wholesome treat that you can enjoy guilt-free.

Grated Carrots

Ingredients:

  • 2 cups grated carrots
  • 1 cup milk (or plant-based milk, preferably coconut)
  • 1/4 cup honey or maple syrup
  • 1/4 cup raisins
  • 1/4 cup chopped nuts (almonds, cashews, or walnuts)
  • 1 tsp cardamom powder
  • 1 tsp ghee or coconut oil

Procedure:

You might think this takes a long process where it is not.it just takes upto 15-20 minutes at max.

  1. In a heavy-bottomed pan, heat the ghee or coconut oil.
  2. Add the grated carrots and sauté on medium heat until they become slightly tender.
  3. Pour in the milk and cook, stirring occasionally, until the carrots are fully cooked and the mixture thickens.
  4. Add the honey or maple syrup, cardamom powder, raisins, and saffron. Stir well.
  5. Cook for another 5-10 minutes, until the pudding reaches the desired consistency.
